Bistro Agnes is steeped in the rich history of French cuisine, and is born of a desire to share that tradition with our Portland friends and family. Of course, as chefs, we will always play with our food. But here at Bistro Agnes, we find our inspiration in bringing cooking back to the basics, and we can’t wait to share these classic dishes with you.

The restaurant is named after Greg’s grandmother, a kindhearted woman who deeply influenced our ideas of hospitality. No one ever left Grandma Agnes’ table hungry; she welcomed everyone and made them part of her family.

We hope that through French cooking, we can bring you that same warmth, comfort, and good cheer reminiscent of what we’ve found in our favorite Parisian bistros. From the moment you walk in the door, we welcome you to joyously share in our culinary journey and passion at Bistro Agnes, your new neighborhood restaurant.

At the bar, we hope to bring the comfort of familiar classic cocktails​,​ while inspiring you to try an assortment of spirits from France and beyond. Traditional favorites like Cognac, Armagnac, and absinthe find a home among our global collection of dynamic and distinctive spirits​. And our rotating wines by the glass allow guests to always try something new and exciting.

The Bistro Agnes wine list reflects a desire to arouse the same nostalgia as the culinary delights. We focus on Pinot Noir from Burgundy and our local Willamette Valley, and we select wines that speak to the roots and traditions of each distinct area. Our old and new world wines all conjure a sense of place, and they are hand-picked to celebrate the flavors of our menu.

The wine team of AlexEli Vineyards, and Joel Gunderson, of Restaurant St. Jack, are following up their wholesale debut with a retail venture, Coopers Hall Winery and Tap Room. Situated in Portland’s Central Eastside, Coopers Hall is both an urban winery and a taproom pouring up to 44 taps of wine, beer, cider and more. The taproom also holds a full service kitchen serving rotisserie cooked meats and savory sides. The spacious environment invites guests to get closer to all aspects of the wine making experience from grape to bottle. We believe that we have found a perfect location for a serious wine production while also offering a wine service experience unmatched in Oregon or elsewhere.

Gabriel and Josue Azcorra, the two brothers of Dos Hermanos bakery have been baking bread for the last 15 years. Originally from Mexico (Merida in the Yucatan), they spent the bulk of their recent careers at Delphina’s Bakery prior to joining the ChefStable family in early 2017.

Dos Hermanos bakery focuses on wholesale production making about 14,000 pieces of bread a week for customers all over Portland. The roster includes Lardo, Grassa, Foster Burger, Coopers Hall, Pearl Tavern, Loyal Legion, ChefStable Catering and countless other restaurants outside of ChefStable. But be sure to check out their storefront on North Williams where they serve sandwiches, coffee, tea and pastries daily.
